In my mind, if a cake has fruit in it, then it’s qualifies as healthy. My kids don’t really eat bananas but they eat cake, so I am calling this a victory. There are 4 big bananas in this baby and it has a little sugar and a few choc chips for extra taste! Everyone loves a banana cake, and this is a dead easy recipe.
4 over-ripe bananas, finely mashed
250g butter, softened
1 cup castor sugar
2 cups SR Flour, sifted
1 tsp vanilla extract
A generous handful of choc chips
Preheat oven to 180 degrees. Grease a 20cm round cake tin
Cream butter and sugar in electric mixer until light & fluffy
Add eggs, one at a time, beating well after each addition
Stir in bananas, then sifted flour, then chop chips
Our into greased tin and bake for approximately 50 mins (times vary so keep an eye on it)
Allow to cook slightly first before turning onto wire wrack
If you’re going to ice this cake, cream cheese icing is the way to go.
200 g softened cream cheese
4 tbs sifted icing sugar
a squeeze of lemon juice
Simply beat all ingredients together in an electric mixer. Yum!
