I am always looking for lunchbox inspiration. One of my biggest lunchbox wins has been these delicious coconut muesli balls. I love them as much as the kids do! But I fell into the habit of buying muesli bars as lunchbox fillers for convenience. But I’ve been wanting to find a recipe for homemade muesli bars, with less sugar and more goodness. I don’t have an issue with store-bought snacks, occasionally, but they’re expensive and loaded with sugar. So I was delighted when I came across this tasty looking recipe for chewy muesli bars. I used this recipe from the lovely and talented, Lucy from Bake. Play. Smile, and adapted slightly. Whenever you’re making something like a slice, you can always substitute golden syrup for honey, butter for coconut oil, or use any dried fruit you have in the pantry. You don’t always need to follow the recipe to the letter. My kids aren’t big on nuts so I left these out and used more sunflower seeds and dried cranberries. No-bake Coconut Muesli balls
Recently I made these coconut balls for my kids’ lunch boxes and they were a hit! I had fallen into the trap of buying store-bought apricot and coconut balls, which are loaded with sugar and expensive. So, I adapted a recipe I found online and created my own version of this classic. These are super easy to make, require no baking, and the kids can help make them. If the muesli you are using already contains diced fruit, there’s really no need to add any extra. I use the Lowan muesli brand, which has sultanas and dried apricots already so I didn’t bother adding any more. Instead, I roughly chopped some pitted prunes to add sweetness (thereby reducing the need for much honey) and to keep things moving along…
Try these babies and adapt to taste. You can use honey, maple syrup or even rice malt syrup. The messy part of rolling and covering in coconut is heaps of fun for the kids. Keep them in an airtight container and watch then disappear….
Banana, coconut and chop-chip muffins
I love a good muffin, don’t you? Possibly the yummiest muffin recipe i’ve ever tried is this Blueberry-licious muffin, but these come a close second.This recipe is about as easy as it gets. You can make ’em small, or make ’em big. I made a big batch recently and made mini sized ones for the kids (great for the lunch boxes) and adult size ones for the grown ups. Give this a go – it’s a crowd pleaser….
