If you’re after a fruit loaf recipe that the whole family is guaranteed to love, this is the recipe for you. The best thing about this recipe is that you’re guaranteed to have all the ingredients in your pantry. There are so few ingredients in this loaf and the end result is moist, sweet and delicious. The ingredients listed here are not prescriptive. Depending on what’s in the pantry, substitute the fruit around with dates, sultanas, dried pears etc.
Ingredients
3/4 cup dried apricots (roughly chopped)
1/3 cup prunes or dates (roughly chopped)
1 cup sugar
1 tbsp butter
1/2 tsp. bi carb soda
1 cup water
1 egg
1 1/2 cups SR flour
Method
Place all ingredients into a saucepan (except the egg and SR flour) and bring to the boil. Simmer gently for a couple of minutes. Tip mixture into a bowl and set aside to cool. You can put in fridge if pressed for time.
When mixture is cold simply add 1 egg and 1 ½ cups SR flour. Mix with wooden spoon.
Pour mixture into a lined loaf tin; bake 180 deg for 40 – 45 mins.
Allow to cool for 15 mins before turning out onto wire wrack.
This cake is delicious served warm but it is so moist and tasty it will keep for several days in an air-tight container.
There is a lot of goodness in this cake, and my kids love it. Perfect for kids lunch boxes.

Is it very sweet? Do you think it would work with less sugar? I have a child who hates sweet things. (I know that sounds odd!)
Nikki I actually only use 1/2 cup a sugar and it works out fine. Yes it’s on the sweet side but not overly. Give it a try and let me know. Reducing the sugar is A-OK 🙂
