This flourless orange and almond cake is simple to make and incredibly light, moist and delicious. It’s my “go to” cake when I want a break from chocolate (which is rare) and is the perfect finish to any meal or for morning tea. Whilst its very easy, it’s quite time consuming so you will need to set aside a couple of hours. The key to getting this cake just right is all in the timing. As soon as the edges are going golden, that’s the time to take this cake out.
Flourless orange and almond cake
1 cup caster sugar
3 cups almond meal
1 tsp baking powder
Step 1 Preheat oven to 170°C. Grease and line a round 22cm springform cake tin.
Step 2 Place oranges in a saucepan and cover with cold water. Bring to the boil over medium heat. Cook for 15 mins. Drain. Repeat process to reduce the bitterness of the peel. Refresh under cold water. Drain. Coarsely chop oranges. Remove any seeds.
Step 3 Process the oranges until smooth in a food processor.
Step 4 Whisk eggs and sugar with electric beaters until pale and thick. Add the orange, almond meal and baking powder and gently fold until just combined. Pour into prepared pan.
Step 5 Bake for 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 15 minutes to cool.
You can leave the cake as is and simply dust with icing sugar when cool, or you can make an orange syrup.
3/4 cup caster sugar
Step 6 Use a vegetable peeler to remove the rind from the orange. Use a small sharp knife to remove white pith. Cut rind into thin strips. Juice orange.
Step 7 Place rind in a saucepan of boiling water and cook for 5 minutes or until soft. Drain. Return to pan with orange juice and sugar. Place over low heat and cook, stirring, for 5 mins or until the sugar dissolves and the syrup thickens.
Step 8 Turn cake onto a serving plate. Use a skewer to gently prick the top. Spoon over syrup.
Step 9 Cut and devour! You can serve this cake as is, or add some pistachio slivers (this adds great crunch and colour) but my personal favourite is having it with a decent dollop of double cream. Heaven….
