If you’re looking for a delicious slice that the whole family can enjoy, this is it. The almond meal makes it light and delicious. It’s impossible to stop at one. You can add slivered almonds to the mixture if you like, but my girls prefer it just with the cranberries and choc chips.
Ingredients
150g softened butter
1/2 cup brown sugar
1 tsp vanilla extract
2 eggs
3/4 cup almond meal
1/2 cup plain flour
1/2 cup SR.flour
1 tbs milk
3/4 cup choc chips (any flavour will do)
1/3 cup cranberries or slivered almonds
*white chocolate to drizzle
Method
1. Preheat oven to 160 degrees. Lightly grease rectangular slice pan. Line base and two long sides with baking paper.
2. Beat butter and sugar in electric mixer until pale and creamy. Beat in vanilla. Add eggs, one at a time, beating well after each addition. Fold in chic chips, almond meal, flours and milk.
3. Spread mixture into prepared pan. Bake for approx 30 mins. Set aside to cool before turning onto wire cooling tray.
4. Melt white chocolate and drizzle over slice. Set aside to harden before cutting into squares.
Just try to stop at one..
I’ll have to give it a try and my Miss S is also under the impression that all baked goods need chocolate.
