Recently I made these coconut balls for my kids’ lunch boxes and they were a hit! I had fallen into the trap of buying store-bought apricot and coconut balls, which are loaded with sugar and expensive. So, I adapted a recipe I found online and created my own version of this classic. These are super easy to make, require no baking, and the kids can help make them. If the muesli you are using already contains diced fruit, there’s really no need to add any extra. I use the Lowan muesli brand, which has sultanas and dried apricots already so I didn’t bother adding any more. Try these babies and adapt to taste. You can use honey, maple syrup or even rice malt syrup. The messy part of rolling and covering in coconut is heaps of fun for the kids. Keep them in an airtight container and watch then disappear….
