If you’re looking for a delicious slice that the whole family can enjoy, this is it. The almond meal makes it light and delicious. It’s impossible to stop at one. You can add slivered almonds to the mixture if you like, but my girls prefer it just with the cranberries and choc chips….

The importance of the family meal
Growing up in a family of seven meant that life was never dull. There were comings and goings and a constant stream of activities amongst five daughters. But we always came together for the evening meal.
Meal times were noisy; the dinner table was a place of spirited debate. Everyone was expected to contribute to conversation and differences of opinion were fostered. We were encouraged to think, to reflect and consider other points of view.
Dinners went on for hours and yet I don’t remember any of us ever complaining. We had so much fun and her involvement made it a really fun and exciting event….

Everyone has their own version (which don’t really vary much) and this one is mine. I can’t remember the original source of this recipe but I like my lemon slice really lemony and the icing has to be not too thick but not too thin either. Adapt to your personal taste. I also think the quality of the biscuits enhances the flavour. Try this one – it’s light, lemony and luscious!…
